Heirloom Tomatoes

Burrata, green goddess dressing, and fresh heirloom tomatoes… what could go wrong? This light and refreshing plate is a perfect light summer dish. Heirloom tomatoes are in season from late summer to early fall and Chef Downer was eager to add this customer favorite from last year back to the menu.

This year, the newer spin on the dish is the addition of the green goddess dressing. Green goddess dressing is a beautiful combinations of greek yogurt, fresh herbs, lemon zest, olive oil, capers, garlic, salt, and pepper. Originating at the Palace Hotel in the 1920s, Chef Philip Roemer allegedly named this dressing after the actor George Arliss and the play “The Green Goddess” (Wikipedia). Now, this dressing is used across the world. We think this new addition will be a great hit with all of our guest. Ask your server to have the tomatoes with a salmon filet and you won’t regret it.
